Making Wine In Las Vegas

aloha,namaste, xin chao,No hae, Kon nichiwa,bonjour,chaio,Hllo, Kaibigan,Holla Amigos Y Amigas,Hello welcome friends !!!Happy Fourth of July.I am having some home made wine with some grilled perch & grill zucini & yellow squash !!I started making wine about 4 years ago when I lived in Temecula California.I first made it only with grapes white & Red .I now make a more interesting wine with oranges & some pink or red grape fruit.I also do one with apples called cider but now I add a little citrus & to made a patch with apple juice,a little orange some banana & a little kiwi added.A friend of mine who served some time in the "Big House" showed me how to make pru no.This changed the way I make wine.With the grapes I added yeast each batch now I make a kicker (a yeast culture) & do not have to add yeast.Now there is yeast in the air naturally . But this kicker with some kind of fruit & sugar & the warm temp. here can make wine in 2 or 3 days & 12 to 18 % alcohol .It ferments so fast in 4 days it is starting to turn in to vinegar.
